Spicy Bacon-Wrapped Dove Poppers

When the dove opener hits, you come home with a vest full of birds and a decision to make. Skip the fuss — dove poppers are the tailgate classic for a reason. Dove breast is dark, lean, and rich, so it loves a little heat, a little sweet, and the fat from bacon to keep it moist. Here's our spicy take.

Why these flavors work with dove

Rich, slightly gamey dove stands up to bold heat. Jalapeño and cream cheese cool and carry the spice, a brush of hot honey adds sweet fire, and the bacon bastes the lean breast as it cooks.

Ingredients

  • 12 dove breasts, boned
  • 6 slices bacon, halved
  • 2 jalapeños, sliced into strips
  • 4 oz cream cheese
  • 1 tbsp Cajun or chili seasoning
  • 2 tbsp hot honey (or honey + a pinch of cayenne)
  • Toothpicks

Method

  1. Season the dove breasts with the Cajun blend.
  2. Spread a little cream cheese on each, add a jalapeño strip, and wrap with a half-slice of bacon. Secure with a toothpick.
  3. Grill over medium heat, turning, 12–15 minutes until the bacon is crisp and the dove is just cooked through — don't overdo it.
  4. Brush with hot honey in the last two minutes.

Make it your own

Swap the jalapeño for serrano if you want real heat, or stuff with pepper jack instead of cream cheese. This same method is killer on duck breast or backstrap chunks.
